The day after posting this blog my iPhone news feed had an article titled, "The One Secret Ingredient Your Home-Made Pasta Sauce Is Missing" or something like that. Eerie how that works. The secret ingredient? Sugar. But thankfully not a lot. The article suggested adding 1/4 tsp (a few grams) at a time to balance out the acidity of canned or less than perfectly ripe tomatoes. I'll try that with my next batch.
