That dinner looks great. Any meal made with real butter is already halfway to success. Butter in spinach: yum! Butter in mashed potatoes: yum! It's amusing your excellent plan faded from memory for a while. Thank goodness the meat turned out well, 10.5 months later!

I recently discovered in my own freezer some cooked and seasoned meat I'd saved in individual size portions in freezer Ziploc bags. Wonderful to have a shortcut to a solid, home-cooked meal. I prefer to use frozen vegetables of all kinds instead of canned, but your method is good, too.
